Despite our regular indulgences, what I encountered on that popular halwai breakfast spread left me stunned. Suryagarh, Jaisalmer has taken this traditional breakfast and scaled it up by a thousand notches, to put on the table a smörgåsbord of desi halwai dishes.
The hotel employs halwais like Gatta Ram to replicate those flavours. The elaborate breakfast is actually a sit-down meal that a guest enjoys over several courses.
For the Halwai breakfast, I found myself in the central courtyard of this beautiful palace-esque hotel. The white linen covered table had pots of pink bougainvillea flowers spread across its surface; the plate setting was exquisite, and flagons of pomegranate juice and masala chai were placed across its entire length. Peacocks strutted around, oblivious to the presence of humans, and rabbits peeped out from nooks...'
