Ingredients:
• Brinjal (cut into bite size and pre fry them lightly)
• Long beans (cut into 2 inches in length)
• Cabbage
• Carrot
• Fried bean curd
• Flower mushrooms
• Sweet potato
• Tau pok (fried bean curd puffs)
• Curry leaves
• Coconut milk
• Cinnamon stick
• Star anise
• Cloves
• Tamarind paste (mixed with water)
• Vegetable or fish curry powder
Blended ingredients:
• Red onions
• Garlic
• Lengkuas (galangal)
• Kunyit (turmeric)
• Sliced serai (lemongrass)
• Vegetable or fish curry powder (add water to make a paste)
Directions:
• Sauté the blended ingredients, then add in the dry spices, curry leaves and sauté until fragrant
• Add in the light santan
• Add in the curry paste and sauté until fragrant
• Add a bit of scallop sauce or mushroom seasoning
• Then put in the vegetables, tamarind juice, bean curd
• Lastly, add in the fried brinjal
• Add in the thick santan, season with salt and palm sugar to taste
The family had the vegetarian curry with toasted sourdough bread and basmati rice. Appetising and simply filling!
Ever since I have this La gourmet Blusteel I love it and 90% of the time it’s on my kitchen stove top while I am cooking. Coz I really like the feel as though I have turned into like “Tai Chow Sifu” (master of stirfrying).
It gives good heat and char to the dishes that I cooked and look at the Char Koay Teow…! Am proud of it. Never thought I can do it but yeah! And look at the kilat kilat wok after cook and before wash, no stick at all!
1. Turn on the fire
2. Add in oil and add in chopped garlic while it starts to smoke.
3. Add in prawns, fish cakes and chives, stirfry for 1 min.
4. Add in fresh Koay Teow, stir to ensure not sticking together.
5. Add in dark soy sauce and some soy sauce, continue to stir fry and add on 1 table spoon of chili giling, stir evenly.
6. Break and egg and stirfry with high flame to get the char and flavour…
7. Add in bean spout last to ensure not over cooked. Stirfry for about 30 seconds.
8. Serve and eat while it’s hot.
If you cut and prepare ingredients in advance, you will take less than 10 mins to cook this. Yes !
